At ACF Chefs of Las Vegas, we believe some of the most meaningful work happens when great food brings people together for a greater purpose. Earlier this year, our chapter hosted a meeting at The Blooming Bistro, a unique restaurant serving as a wellness and workforce training hub for opportune and at-risk youth across Southern Nevada. During that meeting, Program Director Samantha Steele shared the bistro’s powerful mission: empowering young people facing significant life challenges—including those aging out of child welfare, in recovery from substance use disorders, involved in the juvenile justice system, or experiencing homelessness—to build sustainable careers in hospitality. Through a partnership with the Restaurant Hospitality Institute, participants receive required certifications and industry training, with The Blooming Bistro serving as their first job. There, students gain hands-on experience before launching careers throughout the hospitality industry. What began as a simple chapter meeting quickly grew into a meaningful partnership. ACF Chefs Las Vegas member Chef J.B. Brown now serves as consulting chef for The Blooming Bistro, leading back-of-house training development and recently helping launch a festive Bites & Boards fundraiser. Now through December 19, supporters can call 702-888-0592 to order a holiday charcuterie board for pickup or delivery by December 22. Each $125 board feeds 10–12 guests and features an 18-inch round board beautifully arranged with premium cheeses, artisanal meats, seasonal fruits, gourmet crackers, and festive bites. As part of a special training initiative, the boards are hand-crafted by youth currently enrolled in the program and include a handwritten note of thanks. Net proceeds from the fundraiser benefit St. Jude’s Ranch for Children, providing older foster youth and young adults who have recently aged out of care the opportunity to participate in The Blooming Bistro’s workforce development program. The next cohort begins training on December 16, with restaurant-based training starting in January. This partnership is a powerful reminder of how chefs can use their craft to create opportunity, purpose, and lasting change—one board at a time.
